Edible algae in gastronomy
The use of seaweed is expanding in the Spanish culinary culture, it is increasingly consumed, and therefore the sale of seaweed is increasing in our country. Our edible algae are natural products, full of qualities that make them a very versatile raw material.
At La Huerta Marina we work with a green seaweed, the Sea Lettuce, and with a red seaweed, Gracilaria. Both are full of qualities; we are talking about a food rich in iron, vitamin C, vitamin B12, calcium or iodine. Some have classified seaweed as a superfood based on the amount of benefits it brings to the body.
Seaweed can be used in cooking recipes of many kinds; easy recipes, vegetarian recipes and even easy meals that do not have any complexity. It is not necessary to prepare a high restoration dish to include sea vegetables in your diet.
It is as simple as adding Sea Lettuce Essence to a batter to give a twist to a very simple cooking recipe. You can use fresh seaweed or fresh seaweed in salt to make recipes for fish or seafood recipes, dehydrated seaweed can be very useful to make recipes for vegetables or a salad.
Sea Lettuce can be included in a mayonnaise, a very simple step that results in obtaining a marine mayonnaise that is ideal to accompany any type of fish or battered seafood. Wont leave anybody indiferent.
La Gracilaria is a very versatile edible seaweed, since it has vegetable gelatin it becomes a raw material that can even be used to make sweets, at La Huerta Marina we have even made ice cream, with a delicious result. La Gracilaria has some very simple uses, just fry it in very hot oil for a few seconds to get a delicious marine snack.
The rich marsh ecosystem is also inhabited by some halophytic plants known as Salicornia or sea asparagus. It is certainly an exquisite option for a scrambled egg, rice or salad. When you add Salicornia to a dish, you are gaining a plus of salty flavor that may even allow you the option of dispensing with salt.
Today it is already easy to find many people who use seaweed in rice, stews, batters, as a garnish for a fish or even in a gazpacho or salmorejo. It is a matter of time that it is integrated as one more vegetable in the diet of the Spanish.
